I just threw a cake together and it turned out pretty good.
It's sugar free and grain-free (for whatever that's worth), and pairs nicely with tea.



Sarah's Special Cake

1 cup shredded coconut (or nut of your choice)
1 cup vanilla protein powder
3 tsp stevia
1 tsp xanthan gum*
3 TBSP oil
2 eggs
1/2 cup water
2 tsp baking soda

Line a baking pan with baking paper (I do this because my baking pan is rusty eeeewwww)
Bake at 225° Celsius for 17 minutes (don't know what that is Fahrenheit)
Take it out and let it cool for a bit (common sense, right?)

If divided into 6 pieces, each piece contains:
250 calories
16g protein
18g fat
6g carbs

If I was going to improve on this I would have given the cake a little icing or thrown some chopped walnuts or apple in. Something to dress it up. Regardless, it's a decent, basic cake.

*I added the xanthan gum to make the cake a bit more moist and fluffy. The cake would probably be fine without it
